Regional information: Carnivor Winemaker's selected a large portion of the fruit for the Zinfandel from premier vineyards in Lodi. A leading California winegrowing region for over 150 years. Lodi first earned its high-quality wine reputation from the robust, fruit-forward and exceptionally well-structured Zinfandel grown there. The warm days and cool nights of Lodi's Mediterranean climate are ideal conditions for growing intensely ripe grapes while still retaining signature acidity and structure.
Vinification: The grapes for Carnivor Zinfandel were harvested at optimum ripeness, which allowed for easy extraction of rich colour and velvety tannins. The winemaker selected aromatic yeast strains and employed a warm fermentation process, which has resulted in a wine with more flavour and fruitier aromatics. Proper storage after fermentation has helped to build complexity on the palate and bring a nice balance to the wine.
